Teams cook in one, two, or all three categories: whole hog, shoulders, and ribs. The Grand Champion wins the right to compete in Memphis in May for the World Championship, at the American Royal in Kansas City, and wins the title of the State of Illinois Championship.
On Saturday, beginning at 9:30 am, preliminary judging starts in accordance with Memphis in May regulations. There is on-site and blind judging in each category. Three finalists in each category advance to the final round to be judged at approximately 2:00 pm. A Grand Champion and six other place winners will be announced at 6:00 pm.
There is a free street dance on Friday night. Skits are performed by the team for showmanship. Other contests, for example hog calling, are open to the public.
